Ukrainian Borsch – Original Borsch Recipe

Ukrainian borsch is a traditional soup made with beets, vegetables, and meat; it's hearty and healthy. In our borscht recipe, we'll show you step-by-step how to prepare this classic dish yourself.
Ingredients (for 4–6 servings)
400g beef (with bones for the broth)
2–3 medium-sized beets
1 carrot
1 onion
1/4 white cabbage
2 potatoes
2 tbsp tomato paste
2 cloves of garlic
1 bay leaf
Salt and pepper to taste
Fresh dill for garnish
Sour cream for serving

To make the broth, bring the beef and 2 liters of water to a boil in a large pot. Reduce heat and simmer for 1–1.5 hours.
Prepare the vegetables: Peel and finely grate the beetroot, carrot, and onion. Cut the white cabbage into strips and dice the potatoes.
Sauté the beetroot. Heat 1 tbsp of oil in a pan, briefly sauté the beetroot and carrot, add tomato paste and simmer for 5 minutes.
Combine all ingredients , strain the broth, remove the meat and dice it. Add the beetroot mixture, white cabbage and potatoes to the broth. Simmer for 15–20 minutes.
Season to taste. Add garlic, salt, pepper, and a bay leaf. Return the meat to the soup. Let it simmer for 5 minutes.
Serve with fresh dill and a dollop of sour cream. Fresh rye bread goes well with it. Borsch's tips for perfect borscht.
For more intense flavor , pre-cook the beetroot or bake it briefly in the oven .
If you like it spicier, add a splash of vinegar.
