Ukrainian varenyky with potatoes and cheese – recipe from Borsch

Ukrainian vareniki are filled dumplings traditionally prepared with potatoes and cheese. At Borsch, we'll show you step-by-step how to make this classic dish at home.

Ingredients (for 4 servings)
For the dough:
400 g flour
1 egg
150 ml water
1 tsp salt
For the filling:
300g potatoes
200g cream cheese or cottage cheese
1 small onion
Salt and pepper to taste
1 tbsp butter
To serve:
Sour cream
Fresh herbs (dill or parsley)
Optional: fried onions or bacon bits

Prepare the dough: Knead flour, egg, water, and salt into a smooth, elastic dough. Cover the dough and let it rest for 20 minutes.
To prepare the filling, peel the potatoes, boil them in salted water, and mash them. Finely dice the onion and sauté it in butter until translucent. Mix it with the cheese and the potatoes, and season with salt and pepper.
To make varenyky , roll out the dough and cut out circles (approx. 8 cm in diameter). Place 1 teaspoon of filling in the center of each circle, press the edges together, and seal well.
Bring a large pot of water to a boil and lightly salt it. Cook the varenyky in batches for 5–7 minutes, until they float to the surface.
Serve with sour cream and fresh herbs. Optionally, top with fried onions or diced bacon.
