Ukrainian varenyky with cherries – recipe from Borsch

Ukrainian vareniki with cherries are sweet dumplings filled with fresh cherries. At Borsch, we'll show you how to easily prepare this traditional dessert at home.

Ingredients (for 4 servings)
For the dough:
400 g flour
1 egg
150 ml water
1 tsp salt
For the filling:
300g pitted cherries (fresh or frozen)
2-3 tablespoons of sugar (depending on the sweetness of the cherries)
1 tsp vanilla sugar
Optional: 1 tsp cornstarch if the filling is very juicy
To serve:
Icing sugar
Sour cream or whipped cream
Fresh mint or lemon zest for decoration. Preparation
Prepare the dough: Knead flour, egg, water, and salt into a smooth dough. Cover the dough and let it rest for 20 minutes.
To prepare the filling, mix the cherries with the sugar and vanilla sugar. Optionally, stir in cornstarch to prevent the filling from becoming too runny.
To make varenyky , roll out the dough and cut out circles (approx. 8 cm in diameter). Place 1 teaspoon of cherry filling in the center of each circle and press the edges together firmly to prevent the filling from leaking out during cooking.
Bring a large pot of water to a boil and lightly salt it. Cook the varenyky in batches for 5–7 minutes, until they float to the surface.
Serve sprinkled with powdered sugar and served with sour cream or whipped cream. Garnish with mint or lemon zest, if desired. And which varenyky do you like best? Share your tips in the comments!
